Simple & Delicious One Bowl Banana & Ricotta Cake

I love to make this when I have ripe bananas in the fruit bowl that need to be used up. Its a deliciously moist and flavoursome cake that is loved by the whole family. I like to make this one on Sunday in preparation for the week of school lunches ahead. 

Ingredients:

  • 4 ripe bananas
  • 1 cup of fresh ricotta
  • 1/2 cup coconut sugar
  • 2 teaspoons of cinnamon
  • Tsp salt
  • Tsp bicarbonate
  • 1/2 cup coconut oil
  • 1/2 cup olive oil
  • 3 eggs 
  • 1 1/2 cups spelt flour
  • 5 dates
  • 1/2 cup coconut flakes
  • Method:
    Preheat oven to 180C. Line cake tin with baking paper. Add all ingredients apart from the eggs, flour, dates and coconut to a bowl. Mash together until well combined- this can also be done in a food processor. Add each egg in one at a time giving the mixture a slight mix between each egg addition. Finally sprinkle in the flour, dates and coconut and mix very lightly until just combined. Transfer to pre prepared cake tin and bake at 180C for 30mins or until cooked through. Top with coconut yogurt, fresh berries and a drizzle of honey to serve.
